The iconic hemp Brownie stands above all other edibles for two reasons: They can be made in a flash and chocolate makes everything taste good, even weed. Although a ready-made mix will do in a pinch, homemade brownies with cannabutter in the batter reach a new level of deliciousness. Plus, you only need one bowl for this recipe, which makes clean-up easier.
Cake-shaped brownies have their fans, but these brownies are a real treat. The molasses adds a caramel note and provides moisture, while the dark chocolate (at least 60 per cent cocoa content) balances the sweetness with a hint of bitterness. Chewy and gooey are at the top of the scale when it comes to texture, and these brownies combine both in one bite.
This recipe makes 16 chocolatey brownies. 1 gram of weed in half a cup (1 stick) of butter yields 8 to 10 milligrams of THC (the chemical that gets you high) per brownie. Novice edibles makers should use less cannabutter and supplement it with regular butter to start with an even lower dose of 2 to 5 milligrams per brownie.
When edibles taste as good as brownies, they can lead to a loop where you get hungry and then eat more brownies. Think ahead and make a second batch of regular brownies to avoid the temptation to eat one too many. You can follow this recipe by using the same amount of unsalted butter instead of cannabutter. The combination of rich chocolate and crunchy nuts masks the taste of weed, so be sure to label the brownies carefully. Nobody likes to play food roulette.

Ingredients :
Cannabutter
1/2 cup (113 grams) unsalted butter
1 gram of high quality cannabis flowers
Weed Brownies
1/4 cup (21 grams) natural cocoa powder, plus more for the pan
Cannabutter (top)
1/2 cup (100 grams) chopped dark chocolate
1 1/4 cups (250 grams) granulated sugar
1 tablespoon molasses
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
2 large eggs
3/4 cup (90 g) all-purpose flour
1/2 cup (57 g) chopped roasted nuts (optional)
Directions :
- Make the cannabutter by following the quantities listed above and my step-by-step instructions linked in the author’s notes.
- Butter an 8×8-inch baking dish and then dust with cocoa. Preheat the oven to 350°F (177°C).
- In a water bath (or in the microwave in 10-second intervals), melt the hemp butter and dark chocolate. Remove the bowl from the heat, then add the sugar, molasses, vanilla and salt.
- Add one egg at a time and beat well. Beat for about 5 minutes until a 5-second band forms on the top of the batter when the whisk is lifted. Stir in the chopped nuts (if using). Sift or whisk the flour with the cocoa powder, then add to the chocolate mixture. Mix just until the flour disappears (don’t over mix).
- Pour the batter into the tin and place in the centre of the oven. Bake for about 25 minutes, until a shiny surface forms and cracks. Keep an eye on the edges, they will firm up first. Stick a toothpick in the corner to check – you should see a few moist crumbs.
- Leave the brownies to cool on a wire rack for at least 10 minutes before cutting into 16 pieces. (If you like – and if your tin is not glass – you can immerse the tin in cold water immediately after baking. The temperature shock will create a chewy crust while retaining the gooey centre – a tip I learned from Eric Kim).
- Store the brownies in an airtight container for up to a week. If you want to keep the brownies longer, you can slice and freeze them, then reheat in the microwave or oven before serving.
Storage instructions
These delicious hemp brownies have the same shelf life as all other brownies. They can be stored in an airtight container at room temperature for up to seven days. After seven days, wrap them individually in parchment paper and then in cling film and place in the freezer to prevent spoilage. They will keep for a very long time in the freezer. If you also store the brownies in an airtight container with a slice of bread, they will stay soft and moist.
